OMAKASEで1週間のみ予約解放され、迷わず予約しました。1回転目の18:00に伺いました。
今宵の虎河豚は遠州灘で5kg。
◇虎河豚出汁の蕪擂り流し
素材の旨味が身体に染みて最高のスタート。
◇赤貝と菜の花 芥子醤油和え
肉厚で香り豊かな赤貝はしゃくしゃくした心地よい食
感。紐もあり嬉しいな(^-^*)
◇虎河豚出汁の茶碗蒸し 原木椎茸
香りが強く、肉厚で歯応えある原木椎茸。
虎河豚出汁の茶碗蒸しと相まって旨味倍増。
◇てっさと煮凝り
てっさは厚めのカット。食感を堪能しました。
煮凝りは河豚の持つゼラチンと水、醤油、柚子。
身と皮もギッシリ。
◇車海老出汁のアスパラガス吉野煮
惜しみ無く車海老出汁を使用。
地物のアスパラガスもシャキシャキ、甘さ、薫りと三拍
子。 箸休め。
◇虎河豚の焼白子
お塩を強めに当てた焼白子。
もっちりした皮を破ると中身はトロトロでクリーミ
ー。お塩が甘みを引き立てました。
ポン酢で味変。
◇虎河豚の唐揚げ
皆さん無言で囓りついてました(^-^)
揚げ油も軽やかでもう一つ戴きたいです。
◇てっちり(虎河豚、白菜、白葱、椎茸)
虎河豚の身はホロッと、地物のお野菜も主役並みの美
味しさ。
◇三関せり
シャキシャキした歯触りとせり独特の香りがgood
◇雑炊×3
てっちりのお出汁と羽釜で炊かれてご飯。
御代わり毎に味が染み込み何杯でも食べられます。
◇紅ほっぺ
小粒とのことで2粒。
甘みと確り酸味もあるので「甘酸っぱさ」という言葉
がピッタリ。
◇自家製ヨーグルトアイスクリーム
今後は色々とお店を展開されるようで、そちらのお店にも伺いたいです。
