ようやく訪問できました!
岐阜と言えば開化亭。
丁寧な仕事で繊細。ワインと合う中華です。こんなに繊細な中華は衝撃的。調味料に頼らず素材の味と出汁(白湯)を最大限に活かした技法は和食にも通じます。
そんなわけで、ここ、日本にて中仏友好条約締結です!
早めに予約して大勢で行くとワインも楽しめていいかも。
銀座のフルタは高くて行けないけどここならすごくリーズナブル。
