銀座伊東屋裏のビルの地下にある超有名店は評判どおりでした。
厳選した旬の素材とそれを活かす手法。素材の持ち味を活かすための調理法や味つけ。またお客を楽しませるためのクリエイティビティが光ります。
本日は下記の通りでした。
湯葉と松茸はシンプルにお出汁と素材を楽しむもの。鱧と松茸の鍋もそうです。
ポルチーニのフライは素材の旨味、香り、食感をフライに閉じ込めるという手法。
八寸は旬の素材に少しずつ工夫をしながら秋の訪れを目にも舌にも感じられる一品。フォアグラの最中はシグネイチャーディッシュ。見た目に美しくまた取り合わせの妙が光る。
うなぎご飯や煮麺の頃にはお腹いっぱいなんですが、鰻の香ばしさに食欲が刺激され、また煮麺の出汁の染み込むような優しさにすっとお腹に収まってしまいました。
卓上に彩られた旬の素材とこれを活かす技法と創造性はさすがでした。
