今回は「鮨あらい」さんのB1で臼井さんの握りをいただいてきました。
予約はOMAKASEで来店日の数日前に取れました。
B1をここ一年程、任されている臼井さんはケータリングなどの出張も対応されているとのことでそれらとの兼ね合いでB1の席の予約が不定期でリリースされるとのこと。
カウンター7席の方々が揃いつつある中で時間調整の軽いツマミや刺し身などが小気味良いタイミングで提供される中でコースにさらりと入ってゆきます。

全方位に気を回されながらも軽快なトークと堅実な握りを提供してゆく様は圧巻の一言。
これから握りに入ってゆく前段階のツマミは握りを引き立てるようなあっさりとした味わいになっています。
ツマミも握りも味は勿論なのですが、見た目といいますか、フォルムが美しい。
一定の型でどのお客さんへも握りを提供出来るというのはそれだけご自身の中で技術が確立されているということなのでしょうか…
シャリはほんのり赤酢のちょうど良い加減で切りつけもネタに合わせた厚さで口の中ではらりと解ける感じ。
それぞれ特徴が出ていて全く飽きが来ないのでついついお酒が進んで飲み過ぎた感がありました…
おはぎ含めて握りは流石、四ツ谷のすし匠さんを彷彿させるものがありました。
臼井さんがB1を任されているとはいえ、これだけ美味しいとなりますと大将の新井さんの席への期待は爆上がりの青天井になってしまいますね…
うかがえる予定は現状、全くありませんが、いつかは…(笑)
