百名店巡りin新発田!
今回は、鮨 登喜和さんに訪問しました。
おまかせコース13貫、8800円。
最初に、いわしのだしをとったお粥からスタート。
地元の魚を使った13貫に感動。
まずなんといっても、シャリが美味しいんです。
お米1粒が大きく、旨みと甘み、若干の酢も効いていてネタより存在感あるんじゃないのかと思うほど。
あと、1巻1巻こだわりを感じます。
そのネタの最大限の旨さまで美味しくして、提供してる。
それが分かります。
夜に来たかった…。
まあ、今度いきます。
いや、普通に地方ということを考えても1.5万(安く見積もって)くらいだと思って食べてましたからね。
ビックリです。
