2019年11月、恵比寿三丁目交差点からすぐの、かつての「鮨 心白」の跡地に「すし 良月 (あきら)」がオープンした。大将の前岩和則氏は「すし匠 まさ」「茶禅華」で修業後、28歳の若さで独立。大将自らが産地へと出向き、生産者の方々と直接交渉した経験から、この店には、いつもその季節一番の獲れ立ての食材が並ぶ。とくに、串本町で水揚げされた海産物や堀河屋野村の三ツ星醤油など、大将の故郷である和歌山県産の食材がこだわりを持って使われており、故郷への愛が垣間見えるところにも好感が持てる。余談だが、店名の「良月」は、大将のおじい様のお名前である「朗」を、文字遊びによって分解したものだそうだ。
こちらで頂けるのは、一言で言ってしまえば「食べ疲れないすし」だ。米酢を主体に仕上げられたシャリは、口に含んだときにタネとの一体感が生まれ、まろやかな淡い余韻を作り出す。最近流行りの赤酢を使った力強いシャリのすしとは異なり、口の中が強い塩味や酸味に支配されることがなく、最後まで飽きることなく美味しく頂けるところが個人的に気に入っている。
1日8席の夜1回転の営業だったが、スタッフが増えたため、現在は夜2回転になり、若干ではあるが、予約を取りやすくなっている状況だ。この大将の優しさには頭が下がる思いなのだが、図々しくもそれに甘えて、これからもちょくちょく足を運びたいと考えている。
