ここ数年、あまり小田急線には乗らないのだが、美味い焼鳥屋があるというので梅ヶ丘駅を目指した。駅南口から徒歩1分。Y’s ステートというマンションの地下一階にそのお店「やきとりshira」がある。9人掛けのL字カウンター席と4人掛けのテーブルが一卓あるだけの小ぢんまりした店なのだが、店内は連日満席、焼鳥に舌鼓を打つ客で賑わっている。
大将の白柳公之氏は、尾山台の「とり滉」で腕を磨き、2016年に「やきとりshira」をオープン。紀州備長炭をふんだんに敷き詰めた焼き台で、淡海地鶏の雌 (滋賀県) と天城軍鶏の雄 (静岡県) の二種類の地鶏を焼き上げる。「遠火の強火」がセオリーの従来の焼き方とは異なり、鶏肉と炭とが接触するのではないかというくらいの極近火の極強火で焼き上げられた大将の焼鳥は、皮目がパリパリで、中からは肉汁が迸る。このとき鼻からは、脂による薫香と備長炭の香りが怒濤のごとく通り抜けていき、自分の身体が強烈な余韻に支配されていくような感覚に陥る。今となっては、この官能的な凌辱を味わうために、この店に通っていると言っても過言ではない。
まずは 8品 / 4500円 のおまかせを注文し、足りなければそれに追加するシステムだ。焼鳥をお腹いっぱい頂きたいという思いから、いつもコースの中に12~15本くらいの焼鳥を入れていただいている。ソムリエでもある大将と相談しながら、ワインを注文するのもよいだろう。こちらの濃厚な焼鳥は、樽の効いたシャルドネなどともよく合う。
焼鳥の後は、〆に是非とも鳥そばを召し上がっていただきたい。これほどまでに濃厚で旨味の強い鶏白湯ラーメンは他にないのではないかと思わずにはいられない一杯だ。
