4月の土曜日の夜に再訪しました。前回はクリスマスシーズンだったので、春はどのような内容になるのかワクワクしながら伺いました。
まずはWelcome drinkです。ヨモギをはじめとする春の顔ぶれと蔵前のクラフトジンVIVACEで構成されていました。摺られたヨモギの香りがふわりと香ります。それとともにいよいよ始まる…!と、お料理への期待が高まります。
まずは野菜のクリスプと豆腐サワークリームから。前回同様、野菜の甘みとサワークリームの相性が完璧です。蛤とキャビアのササニシキリゾットは、自家製キャビアを作るためチョウザメを仕入れるところから手がけているそうです。程よい塩気と魚介の風味が相まってうっとりするような一品です。アルチザン野菜は目にも美しく、身と心を潤してくれます。スペシャリテの蕪は、瑞々しくしっかりとした甘みが感じられました。この時期はみなさん様々な印象を抱かれるそうで、春は感想がいちばん分かれるとのことでした。ハタと春の山菜すじ 青海苔のフュメは、ハタの独特の弾力と、コリコリとした筍とのコントラストが楽しめました。仔羊のロースは断面が綺麗なルビー色で柔らかく、酸味とコクのある赤ワインビネガーのソース、さらにペアリングで自然派ワインの代名詞フィリップ・パカレの赤ワインが重なり合い、想像以上の美味しさが醸し出されます。ラビオリはほのかな紫蘇の香りが上品なアクセントになっていました。チーズは全6種類を少しずつ頂きました。個人的には、やはりカチョカバロがいちばん好きでした。一緒にシャトー・クーテの白を頂いたのですが、蜂蜜のような甘くやわらかい余韻があり、チーズが進みます。その他、春らしさのある、さくらのアフィネという桜餅風味のチーズも頂きました。はっさくと山羊のチーズのダックワーズは、とにかくバランスが絶妙で感動しました。甘いものが好きということもあり、振り返ると今回のコースの中でいちばんのお気に入りかもしれません。その後、6種類のお茶菓子とお抹茶、紅茶を頂き、お土産を選ばせてもらって帰途につきました。お土産はどれも魅力的で、選ぶのがとても楽しいです。
今回も一流のお料理、空間、おもてなしの心に触れることができ、至福のひとときでした。ありがとうございました。
