半年振りのかぶと。
いつものパターンですが何度伺っても面白いのは必ずしも全て天然が良いという訳ではないから。
このやり方は今回は養殖の方が好み、このやり方は天然が好みという発見があります。
また、今回も天然と養殖の食べ比べでしたが白焼きは宮崎の天然、蒲焼きは岡山の天然。
こういう食べ方は初めてでまた新しい鰻の魅力を藤森さんから教えていただきました。
今回前半は藤森さんのワンオペ。
お客さんの数を少し減らしてはいますが人手不足でこれは大変ですね。
途中から助っ人(以前からおられる方)が来られて通常運転に。
また、最近自動の鰹節削り機が導入され削りたての鰹で出汁を引いた肝吸いがレベルアップ。
しれっと進化。
また機会があれば伺いたいです。
