今回笠本さんが強調されていたのは香りと苦味。
この2つで春を演出。
この日のツボは白魚。
桜塩はそのまま食べるとほのかに感じるけど
あつあつの白魚にかけて食べると
口の中では桜が満開!(杉本 清さん風にね)
冬に比べると春はコクが弱くなる為、
そこはあかざえびを2種類の方法でネットリ感でコク、
餡でコクを。餡かけに添えられた、この時期にしか出せない
柚子の花のほのかな苦味、香りがとても良い仕事。
ふとしたことから笠本さんから玉天丼をいただく事に。
タレと玉天、ご飯の相性は言うまでも無し。
毎度思うのですが全体の流れをよく考えられています。
愉しませ方がとても上手。
また、笠本さんと2番手くんのコンビネーションが絶妙。
2番手くんの所作がキレイ。
「そういうところも大事ですから。」と笠本さん。
しっかり教育されています。
いつ来ても美味い、いつきても楽しい。
