広島在住のアドバイザーの推薦で訪問しました。結論から言うと、ふぐの質、工夫、珍味など圧巻の店でした。
煮こごり 濃厚な旨み
お造りは5キロの天然ふぐ、玄界灘産。縁にうっすらとピンク色が極上ものの証 旨みが素晴らしかった
何故か北海道から海水ウニ 甘い
焼き白子 旨みすごい。あとで刺身に付けたり 雑炊に入れたりいろいろしてみた
ふぐの卵巣の粕漬け プチプチ感と旨みが同居
ヒレ酒 香ばしい
唐揚げ ぶっとい 食べきれないくらい
セイコガ二の蒸し物と言われてビビってたけどセイコガ二のほぐし身に白子ソースがかかったものでした
ホッと一安心 でもこれが旨かった
鍋は カマの部分やらパーツがデカい
身はこの太い身をシャブシャブに しっかりとした筋肉でした
珍味3 ふぐの白子を塩漬けにして15年寝かせたものにフグの身を合わせたもの 発行して旨みが強い
ふぐのオリーブオイル焼き 下は白花豆
他に マナガツオの味噌漬け 子持ちタコ
雑炊
おつけもの 梅干しの表面が硬いのに中が柔らかいのは不思議
ふぐの質は、博多い津みに勝るとも劣らない 縁がピンク色の極上品 寝かせ方は少し浅くフレッシュ感を残す
その他 卵巣の粕漬けや白子の塩辛などの珍味類が頭抜けている。価格も い津み に比べると6割強と言ったところ。
いままでは 田中旅館がふぐの質は一番と思っていたが、中国地方ナンバーワンのふぐの店と言っていいと思う
