Born in Niigata Prefecture in 1965, he was 23 when he first encountered the world of Japanese Cuisine. After moving to Tokyo, he trained at the traditional Japanese restaurant "Sakura" in Harajuku. At the age of 25, he moved to "Hozumi" in Aoyama, and spent another 12 years training at famous restaurants such as "Kamiya" in Nogizaka. He went independent in 2003, and in 2009, he was awarded three stars in the "Michelin Guide Tokyo." Always striving to evolve his cooking, he continues to serve original and delicate dishes today.
