Born in 1974. After training at the famous high-end Yakitori (grilled chicken skewers) restaurant "Ayamuya" in Fukushima, Osaka, and the prestigious kaiseki restaurant "Kimoto" in Kobe (now relocated to Tokyo), he opened "Torisho Ishii" in Fukushima, Osaka in 2016. It moved to Nishitenma, Osaka in June 2020. "The culinary culture of dividing an entire chicken into small parts and then optimally seasoning and cooking each part is unique to Japanese Yakitori (grilled chicken skewers) in the world. I want to spread the word about how wonderful this is," he says passionately.

The chickens used are females from Japan's top-ranked brand chickens, mainly Amakusa Daio, Akita Kogen Hinai Jidori, and Kumano Jidori. The chef's grilling technique, using binchotan charcoal to capture the moment when the flavor of each cut reaches its peak, is a technique only a craftsman who knows fire and chicken inside and out can pull off. As all chickens are purchased whole, rare cuts such as skirt steak and lymph nodes, which require the equivalent of three chickens to fit on one skewer, are also available. One after another, unknown delicacies make their way onto the counter.

Located in a quiet corner of Nishitenma, this is a renovated old house with black walls. There is no sign, and the only landmark is a small lantern with the name of the restaurant "Ishii Jr.", which is run by the same company, written on it. Passing through a stately gravel approach, you arrive at the counter with only 10 seats, with a heavy coffered ceiling and black granite floor, giving it an extraordinary and luxurious feel. The wine cellar is stocked with rare Japanese sake and aged Burgundy wines.

...ickens, such as Amakusa Daio, Akita Kogen Hinai Jidori, and Kumano Jidori, and prepares each dish with exquisite grilling techniques, creating an overwhelming sense of energy as the flavor and juices swirl wildly in your mouth. The side dishes served with the course menu are also stylish, including a consommé soup made with the carcasses of 50 Akita Kogen Hinai Jidori chickens, and a chicken cutlet salsa mini burger.
