...ickens, such as Amakusa Daio, Akita Kogen Hinai Jidori, and Kumano Jidori, and prepares each dish with exquisite grilling techniques, creating an overwhelming sense of energy as the flavor and juices swirl wildly in your mouth. The side dishes served with the course menu are also stylish, including a consommé soup made with the carcasses of 50 Akita Kogen Hinai Jidori chickens, and a chicken cutlet salsa mini burger.
